Viral Crock Pot Tuscan Chicken!

Equipment

  • 1 slow cooker
  • 1 stand mixer or hand mixer optional

Ingredients
  

  • 3-4 chicken breasts
  • 1 cup onion diced
  • 1 can artichokes
  • 1 cup fat free chicken broth
  • 3 cloves garlic minced
  • 1 package Good Seasons Italian dressing
  • 1 package Bella Sun Luci sun dried tomatoes
  • 1 package baby spinach
  • salt & pepper to taste
  • crushed red pepper to taste

Instructions
 

  • Add the chicken, onion, artichokes, chicken broth, sundried tomatoes, garlic, and seasonings in a slow cooker.
  • Cover and cook on HIGH for 3 hours.
  • Shred the chicken with your stand mixer or hand mixer and add back to crock.
  • Mix the spinach into the chicken and wilt for 40 minutes to an hour, stirring occasionally.

This recipe is incredibly easy and delicious, it went viral on Instagram twice! Serve with roasted vegetables, over pasta, rice, or with a side of mashed cauliflower. It also makes an excellent Italian quesadilla the next day with a low carb tortilla and some balsamic glaze. I hope you enjoy!

    I just found your website. Made this recipe tonite and it was delicious! Next time I may add some fresh cherry tomatoes and mushrooms. And 0 points is a win win!!
