Protein Cookie Dough Balls

Ingredients
  

  • 1 cup Kodiak Cakes Flapjack Mix
  • 1 cup creamy peanut butter
  • 1/2 cup old fashioned oats
  • 1/2 cup raw honey
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 pinch salt

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, combine the Kodiak mix, oats, peanut butter, honey, vanilla and vanilla. Stir until combined.
  • Fold in the chocolate chips and salt.
  • Using a small spoon or cookie scoop, form tablespoon sized portions of mix into balls by forming them together and then rolling into shape.

I came up with this idea when I bought a box of Kodiak cake mix and was wondering what the heck to do with it besides make pancakes! I’ve always craved a healthier version of cookie dough, but all the recipes on pinterest have weird ingredients like cottage cheese or chickpeas, just give me a healthier version of the original and call it a day, am I right?
