Spray the bottom of your pot with oil or non-stick spray.
Add in your chopped vegetables (not the garlic!) to the pan and season with a little salt and pepper.
When the vegetables become translucent, add in the turkey sausage removed from its casing and chop up into small pieces. Season with crushed red pepper. 1 tsp to start, but I like heat so I personally add almost a tablespoon!
When the meat is browning and almost done, I add the chopped garllic so it doesn't burn but warms up with the turkey and melts in the soup.
Add in the chicken broth, crushed tomatoes, and parmesan rind. Bring to a boil.
When the soup is boiling, add one cup of lentils and stir. Bring the heat down to a simmer, cover and simmer for one hour.
In one hour, the soup will be done! Serve with grated cheese and Tabasco sauce for extra heat and flavor!
