Skinny Chicken and Dumplings in the Crock Pot! Easy!

This recipe went viral on Instagram and Tiktok for good reason! This simple, low effort meal comes together with 5 minutes of prep and 4 hours of cooking. 6 points per cup on Weight Watchers and so comforting and delicious.

Skinny Crock Pot Chicken and Dumplings!

Servings 8 cups

Equipment

  • 1 slow cooker

Ingredients
  

  • 3 chicken breasts
  • 1/2 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 can 98% fat free cream of chicken soup
  • 1 can 98% fat free cream of celery soup
  • 2 cups chicken broth
  • 1 tbsp poultry seasoning
  • salt & pepper, to taste
  • 1 10 oz can Pillsbury biscuits

Instructions
 

  • Add the chicken, vegetables, soup, broth, and seasonings to your slow cooker. Cover and cook on HIGH for 3 hours.
  • After 3 hours, remove the chicken and shred. Add the chicken back to the slow cooker and mix everything together.
  • Tear or cut up the Pillsbury biscuits and place them into the crock pot on top of the chicken, lightly cover them with liquid.
  • Cover and cook on HIGH for 1 hour.
  • Serve in one cup servings.
