Buffalo Mac & Cheese
5 points for 1 cup on Weight Watchers!

Servings 6 heaping cups
Ingredients
- 8 oz Barilla Protein+ Elbow Macaroni
- 1 lb lean ground chicken
- 5 wedges Laughing Cow Aged White Cheddar Cheese
- 2 tbsp ranch seasoning
- 1 cup Frank's Buffalo Sauce
- 1/2 cup pasta water
- 1 tbsp bleu cheese crumbles optional
- salt to taste
- pepper to taste
- garlic powder to taste
Instructions
- Boil your pasta in salted water until al dente.
- In another pan, brown the lean ground chicken, drain, and add back to the pan
- When pasta is done, reserve some pasta water, strain pasta and put in the same pan with the chicken
- Add salt, pepper, and garlic powder to taste
- Add Laughing Cow cheese, Frank's Red Hot sauce, and ranch seasoning
- Stir, adding pasta water little by little until a sauce forms
- Serve in 1 heaping cup portions and sprinkle with 1 tbs bleu cheese before serving.
