Italian Beef Veggie Skillet

Servings 4 cups

Ingredients
  

  • 1 lb 96% lean ground beef
  • 2 zucchini, sliced into half moons
  • 1 orange bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup water
  • 1 tsp crushed red pepper
  • 1/2 tbsp Cavender's All Purpose Greek Seasoning
  • 1/2 tbsp dried oregano
  • salt & pepper, to taste

Instructions
 

  • Brown the meat in a pan over medium high heat, remove and set aside when done.
  • In the same pan, add the onions and garlic and cook for two minutes, season with salt and pepper.
  • Add the rest of the vegetables and season with salt, pepper, Cavender's, oregano, and crushed red pepper. When the vegetables begin to soften, add the beef, tomato sauce, and water and stir to combine.
  • Bring the pan to a boil and drop the heat to low, cover and simmer for 10-20 minutes.
  • Serve over rice, a baked potato, or with a piece of sourdough bread.

This recipe has become a weeknight staple in my house! Choochi Delucci loved this Italian Beef and Veggie Skillet so much he asked for seconds. I had mine with some brown rice and Choochi had his with his favorite Japanese sticky rice. Let me know if you try this one!
