I worked at Carrabba’s right before starting nursing school and fell in love with their sausage & lentil soup. I ate it every day with a dash of Tabasco. During the pandemic I was craving my favorite soup but I wanted to make a Weight Watchers version, so I came up with this! 2 points for 1 cup on Weight Watchers, the meat is the only thing with points.
Skinny Sausage & Lentil Soup!
Servings 8 cups
Ingredients
- 1 lb Italian turkey sausage, removed from casings
- 1 cup onion, chopped
- 1 cup carrots, diced
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 64 oz chicken broth
- 14 oz crushed tomatoes
- 1 cup lentils
- 1 tsp crushed red pepper
- salt & pepper, to taste
- parmesan rind, optional
Instructions
- Spray the bottom of your pot with oil or non-stick spray.
- Add in your chopped vegetables (not the garlic!) to the pan and season with a little salt and pepper.
- When the vegetables become translucent, add in the turkey sausage removed from its casing and chop up into small pieces. Season with crushed red pepper. 1 tsp to start, but I like heat so I personally add almost a tablespoon!
- When the meat is browning and almost done, I add the chopped garllic so it doesn't burn but warms up with the turkey and melts in the soup.
- Add in the chicken broth, crushed tomatoes, and parmesan rind. Bring to a boil.
- When the soup is boiling, add one cup of lentils and stir. Bring the heat down to a simmer, cover and simmer for one hour.
- In one hour, the soup will be done! Serve with grated cheese and Tabasco sauce for extra heat and flavor!
